Quinoa and Brown Fried Rice
Ingredients:
1 tbspn of Extra Virgin Olive Oil
1 small onion or 3 scallions, chopped
2 cloves of garlic, minced
1 tbspn fresh gingerroot, peeled, grated, and minced or 1 tsp dry ginger
2 cups of Quinoa, cooked
4 cups cooked, cooled Brown Rice
3 tbspn reduced-sodium soy sauce
1/2 cup cooked peas
1/2 cup cooked, shelled edamame
1 cup steamed chopped carrots
2 tbspn cilantro chopped or 2 tsp dry cilantro
1 tsp dark (roasted) sesame oil
Instructions:
1. In a wok or large skillet, heat the olive oil and quickly saute the onion, garlic and ginger, stirring constantly with a large spoon.
2. Add the Quinoa, warm it through.
3. Add the rice, stirring and turning to mix it with the other ingredients and warm it through. Add the soy sauce and mix well.
4. Add the peas, edamame, carrots, cilantro, and sesame oil, and mix well.
5. Enjoy!!!
